Thyme (Thymus vulgaris)



Thyme is a popular herb that has tiny oval leaves with a flavor that mingles well with other herbs. Thyme leaves and sprigs are used for flavoring meats, stuffings, stews, soups and fish dishes. These plants are ideal as an edging, and in rock gardens and between stepping stones. Thyme is a  soother for  headaches, colds, coughs, and sore throats. Sow Thyme indoors 10-12 weeks before the last spring frost. Transplant to a well-drained garden spot in mid-spring. May also be sown in late summer in mild winter areas. Once plants are growing vigorously, pull or cut young sprigs. Thyme holds its flavor well when dried. To store, dry thoroughly and place in airtight jars.
