Oregano is prized for its flavorful leaves, this herb is widely used in several Mediterranean cuisines as well as in many Mexican dishes. Use the leaves in salad dressings, meat loaf, stews, and other meat dishes. Medicinal uses for Oregano are bacterial infections, upset stomach, menstrual problems, urinary tract problems, arthritis, and  asthma. Start Oregano seeds indoors 7-8 weeks before the last frost. Transplant to the garden after danger of frost has passed. In mild winter areas, seeds may also be direct sown in early fall. Water regularly and fertilize when 4" tall. Pinch stem tips to increase bushiness. Cut young stems as needed for fresh use. Oregano dries easily and retains its flavor well. To dry, hang stems in a dry, dark, well-ventilated area. Store in an airtight container. Crush leaves just before use.
