Caraway (Carum carvi)

Caraway plants are easy-to-grow biennials that produce aromatic, finely divided leaves and licorice flavored seeds. Seeds are used to flavor baked goods, cheeses, soups, salads, and meats. Caraway can be used as a gargle, and aide to  help breastfeeding mothers to produce milk. For best results, direct sow in early fall, providing protection in harsh winter areas. Or direct sow in spring as soon as the soil can be worked. Does not transplant well. Water regularly and fertilize when plants are 4-6" tall. Seeds mature faster if watering is reduced when flowers form. Harvest Caraway when first seeds begin to darken and fall, cut entire stem and place upside down in a paper bag. The bag will catch the seeds as they dry and fall. Store in air-tight jar.
