Anise (Pimpinella anisum)
Anise is an attractive, fine-textured herb grown for its licorice-scented leaves and delicately flavored seeds. The sweet tasting leaves are used in salads, with cooked vegetables, and as a garnish. Add the aromatic seeds to fruit salads and sauces, soups, and baked goods including cookies, pies and sweet breads.
Anise can be used internally for coughs, colds, bronchitis, flatulence, relieving tension, and as a breath freshner.
Because Anise does not transplant well it is best to sow directly in the garden as soon as the soil can be worked in the spring. To grow large and produce lots of seeds, plants need a long, cool growing season.
Water regularly and fertilize when plants are 6″ tall.
Begin leaf harvest anytime after plants begin vigorous growth. When first seeds begin to darken and fall, cut entire stem and place upside down in a paper bag. The bag will catch the seeds as they dry and fall.
